Nestled away in the heart of Passyunk is a chef-owned BYOB that’s easily one of the most underrated hidden gems of the Philadelphia food scene. Will BYOB, the charming modern French-inspired restaurant excels in contemporary twists on French classics. Each dish is expertly hand-crafted by Chef Chris Kearse, who has been widely lauded as Philly’s rising star of the restaurant industry.
In Between Rivers was privileged to get a behind-the-scenes exclusive experience. Watching Chris Kearse meticulously plate a dish is like watching a master painter in action - the plate is truly his canvas. And just like an artist would use a brush and palette, this chef uses tweezers to hand-place nettles and flowers into a mastery of delicate garnish.
IBR started with the Cucumber Vichyssoise which features stinging nettles, sunflower granola, and nasturtium flowers. This cold, deconstructed soup is awe-inspiring to witness as bright green liquid is poured over colorful components, cascading onto the textured anatomy of ingredients. The vichyssoise is as fun to eat as it is to view - eat it however you want by either consuming the contents individually or mixing together for a playful discovery of flavors.
For another modern take on a French classic, try the Hudson Valley Foie Gras and Rabbit Terrine. Again, this delicately plated dish is intentionally filled with color, texture, and flavor. Pistachio, cherries, and caramelized banana bread compliment the rich, decadent foie gras to bring about the perfect blend of fruity and nutty flavors.
Top off your delectable meal with the perfect dessert: Valrhona Chocolate Bouchon. Porous brownie-like cakes are crumbled and topped with dehydrated cocoa butter, intricately layered vanilla and chocolate flavors, and burnt marshmallow gelato. Pistachio puree is dehydrated and broken into colorful green crisps which melt in your mouth. The end result is a dessert so ornate you almost don’t want to eat it - but please don’t let that stop you!
No matter what you order at Will, the overall experience, imaginative flavors, and visual aesthetics will be nothing shy of incredible. Will BYOB specializes in vibrantly colored seasonal dishes, with monthly menus and weekly prix fixes. Every third Tuesday of the month Will also offers a tasting menu.
