Not sure where to start? In Between Rivers recommends starting with the Oeuf de Pêucher: fisherman’s style poached eggs on toast with mussels and tarragon cream. However, the Escargots á la Bourguignonne is a close second and features nine Burgundy snails in a garlic herb butter with house-made croutons. Primary courses include but are not limited to braised veal, pan-seared scallops, mustard-braised rabbit, and lamb and tomato stew with duck leg confit.
